Ingredients
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 cucumber, diced
- 2 tomatoes, diced
- 1/2 red onion, finely chopped
- 1 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook quinoa in vegetable broth
- Let quinoa cool to room temperature
- Mix vegetables in a large bowl
- Add cooled quinoa and feta
- Whisk olive oil and lemon juice
- Toss with dressing and season
